Basic Eggs Four Ways

Eggs with fruit. Eggs with sourdough. A cheesy pepper omelette. I keep rotating these ADHD friendly breakfast eggs almost non stop. It never gets old because it works, and for an ADHD brain, something that works reliably is worth holding onto.

Fried, scrambled, omelette and boiled. You don’t need any fancy techniques or special equipment beyond a decent pan. All you need are eggs, butter and a few minutes.

Eggs are one of the best dietary sources of tyrosine, the amino acid your brain needs to produce dopamine. That makes them a genuinely good fit for an ADHD morning.” Pair them with some fruit or sourdough and you’ve got a breakfast that actually sets you up for the day.

On the rare days when even frying an egg defeats me, I grab a portion of porridge I batch prep reguarly and freeze into single serve portions. All I have to do is reheat it and then put the bowl and spoon in the dishwasher when I’m done. This little pause in morning overwhelm usually gives me enough of a recoup to be able to return to my beloved eggs the next day. I highly recommend having at least one fall back option, but make sure you keep it a fallback.

The best way to fry eggs in my humble opition is to use a stainless steel pan. I use this one from Cooks Standard because it’s multi-ply clad so it heats evenly and works on induction. It’s also oven safe, which makes it useful beyond this basic eggs.

Here are 4 simple ADHD friendly ways to have eggs for breakfast

The only variable is time and heat. Once you know your preferred method, the whole thing takes zero thought, which is exactly what you want first thing in the morning. Pair with your favourite fruit or high fibre sourdough and you’re good to go.

Simple Boiled Eggs

These are great for batch cooking too. Boil a few at once and keep them unpeeled in the fridge for up to a week. Grab one whenever you need a quick protein hit.

Ingredients

  • Medium eggs stored at room temperature

Instructions

  • Fill a small pot with a little water and put it on the hob on high. 
  • Boil the kettle at the same time. Once the kettle has boiled, top up the pot with the boiling water so it comes to the boil straight away.
  • Pierce the round end of each egg with an egg piercer or a pin.
  • Lower the eggs gently into the boiling water using a slotted spoon. Reduce the heat slightly so the water stays at a gentle boil. 
  • Start the timer: 5 minutes for runny yolk, 6-7 minutes for jammy yolk, 8-9 minutes for fully set
  • Place the pot in the sink, pour out the hot water and run cold tap water directly into the pot for a couple of minutes to stop the cooking.

Scrambled Eggs

Ingredients

  • 2 Medium eggs stored at room temperature
  • Small knob of butter

Instructions

  • Melt the butter in a pan on low heat. Whisk the eggs in a jug and pour into the pan.
  • Stir slowly and continuously with a spatula, moving the egg around the pan as it sets. Keep the heat low throughout.
  • Take the pan off the heat just before the eggs look fully set, they will continue cooking in the residual heat. Serve immediately.

Notes

Low and slow is the key. The moment you rush scrambled eggs they turn dry and rubbery. If they start setting too fast, take the pan off the heat for a few seconds and keep stirring.

Fried Eggs

My go to for when I can't face a full on omellete

Ingredients

  • 2 Medium eggs
  • Small knob of butter

Instructions

  • Heat a pan on medium. Add the butter and let it melt across the base.
  • Crack the eggs into the pan. Turn the heat off immediately and place the lid on.
  • Leave for 2 to 3 minutes until the whites are set and the yolk is still runny.

Notes

This method gives you a soft, non-crispy fried egg with a runny yolk. No basting, no flipping, no fuss.
If you prefer over easy or a set yolk, flip the egg once the white is set and cook for another 30 seconds to a minute on the other side.

Basic Omelette

Mastering a basic omelette opens the door to a variety of options by adding simple things like peppers, mushrooms and cheese.

Ingredients

  • 2 eggs
  • 1 small knob of butter
  • grated cheese or parmesan optional

Instructions

  • Heat a medium pan on medium-high. Add the butter and let it melt across the base.
  • Whisk the eggs in a jug and pour into the pan. Turn the heat off immediately.
  • Using a spatula, push the egg in from the edges towards the centre, letting the wet egg run into the empty space. Repeat until almost set.
  • Scatter cheese on top if using, then fold the omelette in half and serve.
