Fried Eggs

My go to for when I can't face a full on omellete

Ingredients
  

  • 2 Medium eggs
  • Small knob of butter

Method
 

  1. Heat a pan on medium. Add the butter and let it melt across the base.
  2. Crack the eggs into the pan. Turn the heat off immediately and place the lid on.
  3. Leave for 2 to 3 minutes until the whites are set and the yolk is still runny.

Notes

This method gives you a soft, non-crispy fried egg with a runny yolk. No basting, no flipping, no fuss.
If you prefer over easy or a set yolk, flip the egg once the white is set and cook for another 30 seconds to a minute on the other side.
