Method
- Heat a medium pan on medium-high. Add the butter and let it melt across the base.
- Whisk the eggs in a jug and pour into the pan. Turn the heat off immediately.
- Using a spatula, push the egg in from the edges towards the centre, letting the wet egg run into the empty space. Repeat until almost set.
- Scatter cheese on top if using, then fold the omelette in half and serve.
