Instant Pot Ratatouille

This recipe cuts as many corners as possible. Although my Instant Pot has a sautee function, I always skip it because it’s just another step I don’t really need. Make a big batch of this, refrigerate in a large container to build your plate from all week, or freeze in single serve portions for up to 3 months.



Before making this, I recommend making a batch of my all-purpose spice mix because I use it for a variety of recipes. If you choose to make other recipes from this blog, it’ll be worth making it first and foremost. It has my favourite flavour profile: smoked paprika, mustard powder, fine sea salt and coconut sugar. If you have this on hand before cooking anything else it will save you a lot of time. And if you happen to also adore this flavour, it’ll make cooking even more of a breeze because I found it goes with virtually anything.
Prepping Instant Pot Ratatouille
Ideally an ADHD-friendly recipe involves zero chopping. If you have access to a good prechopped frozen mediteranean veg mix by all means, go for it. I haven’t really found any good ones, so I go through the “trouble” of chopping it all myself.
I have one method of chopping them, which I have repeated enough times that it happens on autopilot. With my headphones in listening to whatever I want it’s almost like I’m stimming. If you want to use a veg chopper, go for it. I actually hate having to clean that thing after so a decent large chopping board and a quality chef knife are a much better investment here.
Skipping the Sauteeing Step
Usually ratatouilee calls for sauteeing chopped onions and garlic first. In my regular “feeding myself” cooking, I almost always skip this step. It’s the thing that stops me dead in my tracks from getting anything on the table. It’s the peeling, the crying, the smell on my fingers, the monitoring of the stuff not getting burnt. So I go for a can of chopped tomatoes that has garlic already in it, and I skip the onion entirely. You could use onion and garlic powder if you like. Completely up to you.
Best Way To Store
I like to either store this in a designated large glass container in my fridge for up to a week or freeze into single serve portions using my 1 cup silicone freezer tray for up to 3 months.
Instant Pot Ratatouille
Equipment
- 1 Instant Pot Mini Duo
Ingredients
- 1 large aubergine or 2 small
- 2 courgettes
- 1 red pepper
- 1 yellow pepper
- 1 can finely chopped garlic tomatoes
- all purpose spice mix
- optional: sqeeze of tomato puree
Instructions
- Peel and chop the aubergine. Cube the courgette. Dice the peppers.
- Empty 1 can of chopped garlic tomatoes with into your instant pot. Place chopped veg on top. No need to stir
- Lock the lid and set the valve to Sealing. Cook on High Pressure for 15 minutes.
- Leave it to naturally release for 5 minutes, then carefully switch the valve to Venting for a quick release of any remaining pressure.
- Open the lid, give it a good stir, if using add a squeeze of tomato purée, and add a few dashes of spice mix. Taste and add more if needed or season with salt to taste.
