Microwave Scrambled Eggs

Microwave scrambled eggs are one of the easiest things you can batch cook. Six eggs, a Pyrex jug, and a few minutes is all it takes. Make the whole batch in one go, store it in the fridge, and you have protein ready for the next three days.

Why you should make microwave scrambled eggs
They pair with pretty much anything. Eggs on toast, eggs with rice, eggs with whatever veg you have going. Breakfast, lunch or dinner. And unlike a lot of batch cooked protein, they reheat well without going rubbery as long as you pull them out while they still look slightly underdone.
All you need is a large microwave-safe bowl or jug. A 1 litre Pyrex jug works perfectly. Crack in your eggs and whisk, then microwave in short bursts stirring with a fork between each.
Why this works for ADHD
The hardest part of cooking with ADHD isn’t the cooking itself, it’s having to repeat it every single day. Batch cooking removes that entirely. You cook once, and on every other day the decision is already made
Boosting the protein
If you want to push the protein content even higher, swap some of the whole eggs for egg whites. Carton egg whites like Two Chicks work well here and save you dealing with leftover yolks. You can also stir in a few tablespoons of cottage cheese or greek yoghurt before microwaving. It melts in, boosts the protein, and makes them slightly creamier.
Microwave Scrambled Eggs
Ingredients
- 6 Medium eggs
- Small knob of butter
Instructions
- Crack the eggs into a 1 litre microwave-safe jug or bowl and whisk thoroughly until fully combined.
- Add the butter and microwave on high for 1 minute. Remove and stir well, bringing the cooked egg from the edges into the centre.
- Microwave for another minute and stir again. Continue in 30 second bursts, stirring between each, until the eggs are just set but still look slightly glossy.
- Remove while they still look slightly underdone. They will continue to cook from the residual heat.
- Transfer to a large airtight container and store in the fridge for up to 3 days. Reheat individual portions in the microwave in 30 second bursts.
